This is a pasteurized goats milk cheese. A semi-soft cheese with light eye formation and a silky mouth feel, aged for 6 months. A rich Gouda with toasted almond and subtle goat notes—a very clean finish. A gourmet, farmstead, goat milk cheese with the taste of a mild gouda. The all natural, artisanal taste, which is unique to their cheese house, is primarily due to the richness imparted by their cheese cave. The semi-soft texture and mild eye formation are complemented by the flavor of lush salted butter combined with hints of grass and mushroom, but with an added hint of goat. Der Gouda Kase goes well blended into buttered noodles and other pasta-based dishes.

Producer description

Goot Essa began in 2001 with a group of Amish dairy farmers who worked together to produce high quality cheese with some of their milk. Their goal then, as now, was to use their cheese-making expertise to provide enough extra income to keep their families on the farm. They have chosen to work their fields in the traditional way, with horse and manpower instead of machines. This means that their farms will be small, but each acre and each animal is cared for with love and the respect of nature because theirs are true family farms. Their goal is to offer food products made from the freshest, highest quality, all-natural ingredients. They make it all by hand, in small quantities, giving each one their individual attention. In the Pennsylvania Dutch dialect, “Goot Essa” means “good food” or “good eating.” It seems only natural to name their group Goot Essa, because they want you to share in their love of hand-made, good old-fashioned food—food with all the subtlety that means slowly aged and gourmet. Goot Essa, because they want you to share their love of recipes passed down over hundreds of years. That is their story—pride in the past, with hope for the future—Goot Essa.
