Elmer and Sarah’s is named for Mark Lopez's grandparents, Elmer and Sarah Stoltzfus. They bought land in 1947 and started a grass fed dairy. The cows rotationally grazed on pasture. His grandfather would milk the cows, bottle the milk, and deliver it via horse and carriage. Years later, after working as a dairy veterinarian, Mark purchased that same family farm from his uncle. In April of 2008, he bought 40 cows and started milking them. A local farm selling directly to customers needed more milk and signed on for three deliveries a week. Next, they expanded into stores in Philadelphia. He built a small commercial kitchen out of a steel 20’ shipping container. They started making yogurt. Their popularity grew slowly, but it grew. Everything that they made, he put back into the farm. Now, over ten years later, they have a full-size commercial kitchen. They distribute our kefir, yogurt, and butter to a wide interstate customer base. They've grown, but their values and purpose have stayed the same. Mark still milks the cows (with some help). He still run the farm and lives there with his family. Not much has changed for the cows, and they like it that way. They treat them like family. They live out their lives grazing on beautiful, lush pastures. They still producing high-quality, nutrient dense dairy products using old-world principles.
